CAJUN TILAPIA WITH CHIPOTLE SAUCE Cajun Seasoning
Serves 4

½ cup ketchup
1 tablespoon Chipotle Seasoning
¼ cup yellow corn meal
3 tablespoons all purpose flour
1 ½ to 2 tablespoons Cajun Seasoning
1 ½ teaspoons dried parsley flakes
½ teaspoon garlic salt, divided
1 teaspoon paprika
24 ounces Tilapia or other firm white fish
2 to 3 tablespoons cooking oil

1. Combine ketchup and Chipotle Seasoning in a small bowl. Set aside.
2. Combine cornmeal, flour, Cajun Seasoning, parsley, paprika, and ¼ teaspoon garlic salt in a plastic bag or shallow dish. Cut each fillet in half lengthwise, then in half crosswise. Pat fish with paper towel until barely moist; sprinkle with remaining ¼ teaspoon garlic salt, and dredge in cornmeal mixture.
3. Heat oil in a large nonstick skillet over medium high heat. Add fish; cook 2 minutes on each side or until fish flakes easily with a fork. Serve with chipotle sauce.
